Banana Crunch Bread

1-1/2 cups all purpose flour
1/2 cup plus 1 Tbsp. sugar
1 Tbsp. baking powder
1/4 tsp. salt
1 cup bran flakes or other type of
    flaked cereal, crushed to 1/2 cup
1 egg
1/2 cup low-fat vanilla yogurt
2 Tbsp. low-fat milk
1 1/2 cups mashed banana (about 3 medium bananas)
1 tsp. vanilla extract

1. Preheat oven to 350 degrees. Grease an 8-1/2 x 4-1/2 x 2-1/2 inch loaf pan. Stir together flour, sugar, baking powder, salt and cereal.
2. Combine egg, vanilla yogurt, milk, mashed banana and vanilla.
3. Add banana mixture to flour mixture and stir until moistened. Pour into loaf pan. Sprinkle top of mixture evenly with remaining tablespoon of sugar.
4. Bake 45-50 minutes or until toothpick inserted in center comes out clean. Best if served warm!

Makes 1 loaf or 12 servings.
